Last week you will have seen my review of Julian Bakery Paleo Coconut Flakes; the new Paleo friendly cereal that is now available in the UK. I promised some delicious recipes using this product and here is one of my favourites, Paleo friendly chocolate crispy cakes!
I think for most people these delicious treats bring back memories of childhood – I know that a birthday party in the 80’s was simply not complete without them. For me, they bring back fantastic memories of baking with my mum. I remember standing on a chair to reach the counter and wanting to get my hands into everything. Luckily with this recipe that is a help rather than a hindrance! They are perfect for making with children (or just as a treat for yourself) and it is one recipe that is pretty impossible to go wrong. I personally love the fact that I can enjoy these as a treat without having to eat cereal that is packed full of sugar, gluten and additives.
In this recipe I used good quality dark chocolate that is both dairy and sugar free. If you wanted to go the extra mile you could make your own chocolate before combining with the Coconut Flakes. If you wanted to give this a go then take a look at my blog for Raspberry & Coconut Chocolate Bark and follow the instructions on how to make your own homemade chocolate. Instead of pouring into a tray you will need to add the Coconut Flakes and mix everything together before placing into the fridge to set.
You can easily add some flavouring to the crispy cakes; some orange zest would work well or you could stir in some chopped up berries for some added texture and a fruity flavour. I tried some of my crispy cakes with a sprinkling of dehydrated raspberries, this brings a bit of colour and also cuts through the richness of the chocolate. I think that raspberries and chocolate are a match made in heaven and is one of my favourite flavour combinations.

Chocolate Crispy Cakes
Preparation Time: 10 minutes
Chilling Time: 30 minute
Total Time: 40 minutes
200g dark chocolate, 70% + cacao solids
1 tbsp raw honey (optional)
150g Paleo Coconut Flakes
- Melt the chocolate in a bowl over a pan of slowly boiling water.
- Once melted stir in the honey if using.
- Take the bowl off the heat and allow the chocolate to cool slightly.
- Add the Coconut Flakes into the chocolate bit by bit.
- Stir well until all the Coconut Flakes are covered in chocolate.
- Spoon the mix into cake cases
- Place into the fridge to set for at 30 minutes.
- Enjoy your Paleo friendly chocolate treat!
