Mango Ice Cream

This dessert is great; not only because it tastes fantastic but because it only has three ingredients and is quick and easy to prepare. It is perfect for when you have friends around for dinner and do not want to spend your whole time in the kitchen or just for those nights when you fancy something a bit sweet. It is great for kids as they get to have the treat but without the sugar and they wont even know it is good for them.

I am big believer in keeping things simple so having a recipe with just three ingredients (and one of those is optional!) is perfect and it really will be ready in less than 10 minutes. My non Paleo eating friends always refuse to believe that I can make ice cream from scratch in such a short period of time and without fail they all agree it is better than the shop bought versions and they now love making it at home. Just another small step in spreading the joy of Paleo.

This recipe is incredibly refreshing in the summer but I also love curling up with my blanket and indulging in a bowl during the winter months. It really is versatile and a firm favourite in our house. Keep an eye out for our nutty banana ice cream recipe coming soon!

Mango Ice Cream

Servings: 4

Preparation Time: 10 minutes

Ingredients

1 tin coconut milk

400g frozen mango cubes

Handful of ground almonds (optional)

Preparation

This is so quick and easy. To start you need to place the frozen mango pieces into a food processor and then blitz until it starts to break down and form a mango pulp. Once you get to this stage you just need to start pouring the coconut milk into the blender. I would suggest going slowly with this and make sure that you keep an eye on the mixture until it reaches a smooth ice cream like consistency (usually about 100-150ml of coconut milk is needed for this but it will vary according to your preference).

If you want a thicker consistency then add the ground almonds. Tip; if you only have flaked or whole almonds available you can blitz these first until they form a fine powder texture. Keep on adding the almonds until you have reached the desired consistency. Enjoy straight away as it will start to melt!
