We are continuing our mini series on Paleo baking with a delicious recipe for banana bread. It is a really simple and easy to follow recipe and would be perfect for making with children plus the raw batter tastes pretty good as well. You can easily personalise the recipe by adding some of your favourite flavours; the addition of blueberries, chocolate chips or crushed walnuts to the mixture before baking would work well.
You can serve the banana bread on its own (delicious with a cup of tea) or you could drizzle with some honey, serve with a homemade berry compote or even with a dollop of thick coconut cream on top; you could even try a combination of all three.
Every oven is slightly different so make sure that you keep checking on the progress of your banana bread. You are looking for a nice golden brown crust; the best way to tell if it is ready is to insert a knife into the bread and if it comes out clean then it is ready to come out of the oven. You can eat it when it is nice and warm but best to let it cool for a least a few minutes first to get the best flavours.
Coconut flour is used in this recipe as a paleo friendly alternative to white flour. The best place to buy this will be a health food store although I have found that a lot of the smaller stores tend not to stock this. I live close to a really good organic supermarket so am very spoilt with options but otherwise I would suggest that it may be easier to buy online.
Paleo Banana Bread
Servings: 8-10 slices
Preparation Time: 15 minutes
Cooking Time: 45 minutes
Total Time: 1 hour
4 bananas, sliced
4 tbsp almond butter
4 tbsp coconut oil
4 tbsp coconut flour
1 tbsp cinnamon
1 tsp baking powder
1 tsp vanilla extract
1. Pre heat the oven to 180C.
2. Blend the nut butter, bananas, eggs and coconut oil together to form a smooth batter.
3. Add the flour, cinnamon, baking powder, vanilla extract and a pinch of salt and mix well.
4. Place the mixture into a greased loaf tin making sure the mixture is evenly distributed.
5. Place into the oven for 45 minutes.
