I love to keep things simple and let the flavours speak for themselves and in this recipe the raspberries are the star of the show. The colour alone is spectacular and the taste is fruity and fresh. A perfect combination. This recipe is great as you only need a handful of ingredients and within 10 minutes you can have your own homemade ice cream. This means you can easily whip this dessert up on the night and not have to be stuck in the kitchen for hours.
I served my ice cream as a double portion for sharing with some fresh raspberries, pomegranate seeds and a sprinkling of desiccated coconut. It would also work well with grated dark chocolate or you could even pour some bubbles over the top for a decadent valentines treat. It is like a Bellini dessert. Need I say more?
You can either enjoy the ice cream straight away or make it in advance and then put it in the freezer. If you are wanting to freeze all or part of the mixture then place into an air tight container (making sure it is evenly spread out) and then place into the freezer. When you get the ice cream out again it will then need a good 5-10 mins to soften up before serving.
Raspberry and Banana Ice Cream
Preparation Time: 10 minutes
For the ice cream:
1 banana, frozen in chunks
150g frozen raspberries
50ml coconut milk
2 tbsp ground almonds (optional)
For the garnish (optional):
Handful of pomegranate seeds
Handful of fresh raspberries
1 tbsp desiccated coconut
1. Place all the ice cream ingredients (except the almonds) into a food processor and blitz together until an ice cream texture is achieved.
2. If you would like a thicker texture then add the almonds and blitz again.
3. Serve the ice cream in a bowl with fresh raspberries, pomegranate seeds and a sprinkling of desiccated coconut (optional)
4. If you want to add a bit of sweetness then you can drizzle some honey over the top.
5. Eat immediately as the ice cream will melt quickly.

I personally love petit fours and this is one of my all time favourite recipes. Perfect with a rich espresso or a glass of something bubbly they truly are a luxurious treat but with none of the guilt. Could it get anymore perfect?
